Pineapple Upside Down cake!!

I LOVE dessert. I love making it, and eating it, although preferably NOT after I have spent a couple of hours preparing, cooking and cleaning up after dinner. So we tend to have irregular desserts, and are struggling to find something easy enough for me, but that everyone will eat. I LOVE puddings…. Bread and butter pudding is my specialty, however DS2 doesn’t like it. I have just rediscovered baked custard – super easy, great way to use up eggs. Again Ds2 doesn’t like it. Apple or other fruit crumble, DS2 and DH aren’t huge fans, but will eat it to please me.

However, put a Pineapple Upside Down cake on the menu, and stand back so you don’t get trampled in the stampede to eat it. I use a recipe I got on the internet HERE, however I have taken to halving the cake portion, as otherwise it seems to make a large dense cake that overpowers the topping. Which is kinda the whole purpose of MAKING an upside down cake in the first place!!

So here we are….. egss in hand….

Lovely thick shells, hard to crack!

Luscious rich white and golden yolk.

I have NEVER used an egg that was this fresh – laid the day we used it. That white is incredible.

I have NO idea how come our yolks are THIS rich, but this colour is really how it was – the batter was neon yellow. I have had experience with eggs from several friends who have their own chickens and have HEARD about incredible yolk colour, but this is the first time I have seen it in action.

And the finished product….

Best served warm with a big dollop of cream!

Meanwhile, we were gifted with 2 more eggs today before lunchtime, so we had pancakes for dinner. And yes, the batter was neon yellow again. Amazing.

Which reminds me, there’s 2 slices of Pineapple Upside Down cake in the fridge, and one of them has my name on it. Sorry about the drool on the keyboard, I’m sure it will wipe off 😉Happy Crafting - Cassie.

    That looks very delish!!! I thought of you yesterday as I was wandering through the shops … I saw a book called ’The Contented Chook’! I know your girls are very contented … congrats on the ’egg’ thing!
